No-Bake Peanut Butter Cup Bars

Several weeks ago, I bought some raw Reese’s Peanut Butter Cup bars from a local seller who encourages healthy eating. They were super delicious and unlike anything I’d had before, and I decided that I had to try making some myself. I Googled to see what was out there, and this recipe came to my attention. The recipe appeared to be fairly easy with accessible ingredients, so I waited for the best time to make them, and that time finally came.

Oh, my yum. These bars are phenomenal! Even my picky parents love them. You know how sometimes recipes turn out to be a disaster? Well, this was so not the case! If anything, this recipe will go in my repertoire and will be a regular. Plus, it really doesn’t hurt that it’s vegan, no-bake, and just so delicious. After nomming on this sweet, I cannot eat any more Reese’s Pieces. Huzzah for finding a healthier, home-made option!

Peanut Butter Cup Bars

Chocolate Crust
  1. 1 1/2 cup ground almond meal
  2. 4 tablespoons cocoa powder
  3. 4 tablespoons pure maple syrup
  4. 2 tablespoons melted coconut oil
Peanut Butter Filling
  1. 1 cup creamy natural peanut butter
  2. 6 tablespoons pure maple syrup
  3. 2 tablespoons melted coconut oil
Chocolate Topping
  1. 1/4 cup cocoa powder
  2. 1/4 cup melted coconut oil
  3. 3 tablespoons pure maple syrup
Instructions
  1. Line an 8x8 pan with parchment paper or aluminum foil.
  2. Mix the crust ingredients together and press it down evenly in the pan. Set it in the freezer.
  3. Mix the filling ingredients together until it's creamy and pour the filling on top of the crust. Spread the filling out and level it with a spatula. Return the pan to the freezer.
  4. Mix the topping ingredients together until smooth and pour it on top of the filling. Return the pan to the freezer.
  5. Let it set for about 1-2 hours. When firm, remove from the pan and slice them into bars.

    Yum! They look great, I’m not keen on peanut butter and chocolate but if I were I think these would be gone in seconds.

    Peanut butter and chocolate are the best things ever, definitely going to try and make these (and I mean “try”). Great guest post.

    OMG you should definitely go as Gamora, that would be amazing. I’m aiming to be the Ice King from Adventure Time some time this year, I have the most beautiful white beard and hair ready, just need to make a crown. I wish I could afford to go to London again in October, it was seriously the best experience ever. Spending 3 days in a comic book world was so crazy, even our hotel was full of cosplayers. Just awesome. Off to Manchester and Birmingham definitely, and aiming to go to London again next year at least. Unless I somehow manage to get rich by October!

    OH MY GOSH! These look delicious. I’ve been trying to eat better lately and trying to deny myself of chocolate is very hard. I think I may have to try these. Thank you Tara for sharing your recipe.
